This recipe was developed by learning from multiple sources, but I want to give special credit to 'Sam the Cooking Guy'.  His material is hilarious and he has a number of great recipes.

4c flour
1.5 tsp kosher salt
1c whole milk
1/2c water (+ 1tbsp)
1/4c sugar


3/4 stick butter (+ 2 tbsp)
1 tbsp honey
Active Dry yeast
3 Eggs 
Sea Salt

Ingredients:
Directions

Dry Mix
- Combine flour and kosher salt
Wet Mix
- Warm 1c milk + 1/2c water + sugar to 110 degrees (not too hot)
- Melted butter (let cool)
- Add 1 packet of active dry yeast
- Wait for bloom (3-4 mins)
- Add 1 beaten egg + 1 egg yolk
Mixer
- Combine dry + wet mix
- Use bread hook and mix for 5-8 mins until smooth / elastic (dough pulling away from sides + slightly sticky)
* Tip: add flour around minute 3 if too sticky.  Add 1 tbsp at a time but never more than 1/4c (max of 4 tbsp).  "Over mixing" will insert additional air into the dough and discolor, possibly losing flavor

- Remove from mixer and make into a ball by bringing sides down

Mixer (continued)
- Drop into a lightly greased bowl and cover w/ plastic wrap (let rise for 1hr until doubles in size)
Roll out
- Flour surface and lightly kneed dough to remove air (1-2 mins)
- Roll into sub shape, then roll out into rectangle (~18")
- Roll up and set with seam down
- Cut into pieces of 3" (approx 15)
- Pull down sides to make smooth (seems at bottom)
- Place on buttered cast iron skillet
- Cover with towels for 30 mins (2nd rise)
Oven
- Mix 1 egg + 1 tbsp water and brush tops lightly
- Bake for 20-25 mins at 350 degrees
Finish
- Melt 2 tbsp butter + 1 tbsp honey and brush on top & creases
- Apply sea salt to top

OK, I'm a hamburger snob.  I like a burger that doesn't require condiments.  But I'm also known for going deluxe with egg, seasoned pineapple, sharp cheddar cheese, tomato, grilled onions...so you get the picture.

It has to be messy to be good, so make it the way you like it and enjoy!

1 lb Hamburger Meat (80/20)
1 Tomato
1 Onion
16 oz Pineapple Slices
4 Eggs
4 Sharp Cheddar Cheese Slices
4 Hamburger Buns

Salt

Pepper

Hamburger seasoning

Tajin seasoning

Olive Oil

Rosemary

Thyme

Ingredients:
Directions

Lightly pack hamburger (1/3lb) - this is critical
Slice Onions
Slice Tomatoes (keep refrigerated)
Slice Pineapple
Heat and Oil griddle
Add oil, rosemary and thyme to sliced onions, place on griddle - flip as needed
Add Tajin seasoning to both sides of pineapple slices, place on griddle - flip as needed

Season one side of burger with salt just before adding to griddle (lay season side down)

Season opposite side of burger with pepper

Flip burger when ~75% of burger has cooked

Add olive oil to griddle and place eggs - flip when firm - only leave for 20 secs on yolk side (salt as needed)

Flip burgers and apply slice of sharp cheddar cheese
